在云南每當(dāng)上市時(shí)間,新鮮的松茸特別受歡迎,人們對(duì)松茸顏色應(yīng)該是淡黃會(huì)米白色,如果顏色變黃或變黑則代表不新鮮,不建議購(gòu)買。優(yōu)質(zhì)的松茸有一股獨(dú)特的香味,而沒(méi)有什么香味則代表不新鮮或品質(zhì)較差,此外這種香味會(huì)吸引蟲(chóng)類,所以在購(gòu)買時(shí)要注意有沒(méi)有蟲(chóng)洞,它們會(huì)影響到品質(zhì)和口感。選擇新鮮松茸時(shí)一定要選擇干燥中帶一點(diǎn)濕潤(rùn)的,如果過(guò)于濕潤(rùn)會(huì)破壞到松茸的纖維組織,極易變質(zhì)腐敗。
